SMOKED WHOLE CHICKEN


Juicy, tender chicken with a delicious smoky flavor that you have made! How does that sound? Whole chickens are one of my favorite things to make, but during the winter I typically just put them in the crock pot. During the summer we put a delicious BBQ Chicken Rub on them that’s homemade, then put them on the pellet grill.  After three hours or so, depending on the size of your chicken, you’re left with a tender, juicy BBQ Dry Rub Smoked Whole Chicken!

Have you noticed that smokers are increasing in popularity? It seems like it’s the new rage to have one. You’ll want to be sure and try my recipe for Smoked Brisket or Smoked Prime Rib.

I’ll admit it after tasting meat prepared on our neighbors smoker and every one singing them praises we bit the bullet and bought one. At first it was a little intimidating. Ok, it was a LOT intimidating. Most recipes had 19 steps, took 36 hours and a whole lot of time.

I kind of threw my hands up in defeat before I even started.
We’ve tried a few of those recipes, but the ones we keep going back to are the easy ones. The ones that take about three hours or less and we still get delicious, tender meat with that amazing smoker taste.
That’s just how we roll.

I’m assuming that you are reading this and probably thinking the same thing.
Complicated, time consuming recipes are great once in a while, but it’s really nice to have some easy ones for the smoker too. You know the ones even your wife can make 😉

My husband is more the smoker master around here and I’m the one in the kitchen prepping the meat. After we do the hand off he’s in charge outside. It works, I don’t mind it because it gets me off the hook!

I loved this smoked whole chicken because it took me about 5 minutes to rub the seasoning on, hand if off to the hubs who threw it on the smoker and we walked away. Literally. Never opened it up until the thermometer read 165 degrees F. Then we took it off and let it rest about 10 minutes.
You guys, if the smoker is slightly intimidating to you. This is the recipe to start with. It doesn’t get much easy than this one!

Plus, we love to throw two of these on the smoker and then use one of them for leftovers. It makes great sandwiches, wraps and pizzas! Mmmmm Grilled Pizza!

HOW TO MAKE BBQ DRY RUB SMOKED WHOLE CHICKEN:

Preheat your smoker to 250 degrees. We used competition blend pellets in our pellet grill, but hickory, apple, pecan and maple would be great too!

Rinse the chicken under cold water. Pat dry. Trim any excess skin or fat around neck area on in the cavity of the bird. Then rub the chicken with dry rub liberally.

Place chicken on smoker. Close pellet grill lid and cook at 250 degrees for about 3 hours for 3.5 lb chicken or until chicken has reached 165 degrees F.
Let rest 5-10 minutes and then enjoy!

INGREDIENTS

  • 1 whole chicken
  • 3 Tbsp BBQ Chicken Rub

INSTRUCTIONS

  • Set smoker to 250 degrees F using wood of your choice. We used competition blend wood, but hickory, apple, oak, pecan and maple would be great too!
  • Rinse the chicken under cold water. Pat dry. Trim any excess skin or fat around neck area on in the cavity of the bird. 
  • Generously rub the chicken with dry rub. Make sure you get all areas of the chicken covered with the spices. 
  • Place the chicken on the smoker rack and close lid. Cook until it reaches an internal temperature of 165 degrees F. This can very by chicken size. Ours took about 3 hours and was 3.5 lbs.
