Today I made the Honey-and-Soy-Glazed Chicken Thighs recipe from NYT Cooking. As you can see, I served it with white rice, broccoli and a lemon wedge. I used to not like chicken too much because all we ate were breasts, which ended up dried out and tough. But thighs have started a whole new love affair with fowl. 

 Honey and Soy Chicken Thighs (in a slow cooker) ... this has to be one of the easiest dinners for when you are busy ... mix honey and soy with some herbs abs garlic, place thighs into mix and stir through, thighs and side is then placed into slow cooker and cooked for six hours on low.

It takes about 5 minutes to prepare this dish, one hour to marinade and 40 minutes to bake it, in other words it requires about 10 minutes of your time to make finger-licking chicken thighs for dinner.

To make Honey Soy Chicken Thighs Recipe you will need:

  • 2 1/2 pounds organic skin & boneless chicken thighs
  • 3 tablespoons olive oil
  • 1/2 teaspoon chopped ginger
  • 5 tablespoons raw honey
  • 3 tablespoons soy sauce
  • 4 cloves of garlic, minced
  • salt and pepper to taste
  • fresh parsley, chopped for garnish
 
Marinating ingredients mixed inside the mixing bowl.

How to make Honey Soy Chicken:

First, in a mixing bowl combine olive oil, ginger, honey, soy sauce, garlic, salt and pepper.
Chicken thighs marinate.
Next, rinse and trim off all the fat from the chicken, then place it in the bowl with the marinade.

How to Bake Chicken Thighs:

Preheat the oven to 400F.
Marinade chicken for at least 1 hour. After, place chicken thighs and marinate in cast iron or baking dish and bake for 35-40 minutes or until chicken is cooked thru, make sure to flip the chicken 1-2 times, that way the chicken will be juicy & tender without dry top. After flip the chicken on the other side and broil on high for 5 minutes or until beautiful dark brown color.

Finally, garnish with chopped parsley, serve with rice or mashed potato, and make sure to pour the sauce over the chicken when serving.  It is yum!
