I came up with this easy chicken and dumplings because when I was a little girl my family would always stop at Cracker Barrel when we are on a road trip. It was a great place because we would be able to get a good meal and stretch our legs in the fun store. My mom would always get the chicken and dumplings whenever we went. Cracker Barrel Chicken and dumplings was her must have meal every time.

Chicken and Dumplings is her favorite but she doesn’t get to have them of since she doesn’t have a Cracker Barrel near her.

I wanted to be able to give her a meal she loves so much right at home so I made her this Copycat Cracker Barrel Chicken and Dumplings. I don’t know if she was saying it because she is my mom or if it 100% true, but she told me this is the homemade chicken and dumplings recipe.

I am going to say that my family says the same thing when I make this chicken and dumplings from scratch recipe, so I am leaning towards believing she really means it. 😉

How to Make Chicken and Dumplings from Scratch

When I make chicken and dumplings from scratch I make my own stock, you can make your own or use a boxed one. If you are making your own and have leftover stock, use this trick for storing the extra chicken stock for any extra chicken stock you have when making your Copycat Cracker Barrel Chicken and Dumplings.

  • fryer chicken or a stewing hen
  • onion
  • carrots
  • Celery
  • Salt
  • Pepper
  • water

Dumplings Ingredients

  • Flour
  • Baking soda
  • Salt
  • Shortening
  • Milk

How to Make Chicken and Dumplings

Remove the chicken neck and gizzards. Place the chicken, onions, carrots, and celery in a large stock pot and cover with water. Bring to a boil, then reduce heat so water maintains a gentle simmer.
Cook chicken for 2-3 hour. I love to cook it for a long time to get a lot of flavor.
Mix flour, baking soda, and salt together in bowl. Cut shortening into flour mixture with your fingertips until it resembles small peas. Add milk a quarter cup at a time, you may not need a full cup.
Stir until a ball of dough just begins to form, being careful not to over mix. On a flour surface roll about 1/4 inch thick.
Using a pizza cutter cut dough into rectangles about 1 inch wide by 2 inches long. Place strips on flour sheet pan and allow to harden for at least 30 minutes or up to several hours.
Once chicken is done, remove from the broth and let cool. Remove chicken from the bone and shred into medium-sized pieces, discarding bones and skin.
Pour the chicken broth through a fine mesh sieve lined with a coffee filter, discarding vegetables. Reserve 6 cups of the broth for the dumplings.
Refrigerate or freeze the rest to use in for another recipe.
In a large pot over medium-low heat, bring broth to a gentle simmer and drop in dumplings.
Cover and allow to cook for 7-10 minutes.
Reduce heat to low and add chicken.
Allow to cook until thickened, about 20 to 30 minutes.
Season generously with salt and pepper.

These chicken and dumplings using canned biscuits are an easy alternative to making chicken and dumplings from scratch.
To make these chicken and dumplings, I started by opening a package of Pillsbury refrigerated biscuits and cutting each one into four pieces.

Then I dumped some butter and diced onions into a large saucepan over medium-high heat.

I cooked the onions until they were translucent.
Then I added some flour to the pot and stirred it well to mix it with the butter and onions.

Then I added some condensed chicken broth to the pot and stirred well.

I also added some heavy cream to the pot and stirred again.

Then I brought the liquid to a boil.
Once the liquid was boiling I added some canned peas and carrots to the pot, as well as some shredded rotisserie chicken, salt, pepper, onion powder and sage.
If you don’t want to use a grocery store rotisserie chicken you could also cook your own chicken.

I stirred all of the ingredients together well and then added some cut up Pillsbury refrigerated biscuit dough to the pot.

I stirred the biscuit dough into the the mixture very gently, then reduced the heat to medium-low and covered the pot.
I left the chicken and dumplings to cook for 20 minutes, stirring gently every 5 minutes so that nothing would stick to the bottom of the pot.

Ingredients You’ll Need to Make These Easy Chicken and Dumplings with Biscuits:

  • 1/4 cup butter
  • 1 yellow onion, diced
  • 1/4 cup all-purpose flour
  • 10.5 oz condensed chicken broth
  • 4 cups heavy cream
  • 8.5 oz canned peas and diced carrots
  • 2 cups chicken, cooked, shredded
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp onion powder
  • 1/2 tsp ground sage
  • 12 oz Pillsbury refrigerated biscuits
Instructions:
  1. In a large saucepan over medium-high heat, cook butter and diced onions until onions are translucent.
  2. Add the flour to the pot and stir well. 
  3. Continue cooking until the flour just starts to turn golden brown.
  4. Add the chicken broth to the pot and stir really well.
  5. Add the cream and stir again.
  6. Bring the liquid to a boil. While waiting for the liquid to come to a boil cut the Pillsbury biscuits into quarters.
  7. Once the liquid is boiling add the peas and carrots (drain them first), shredded chicken, salt, pepper, onion powder and sage to the pot. Stir well.
  8. Add the pieces of biscuit dough to the pot and stir gently.
  9. Cover the pot and reduce heat to medium-low.
  10. Continue cooking the chicken and dumplings for 20 minutes while covered, stirring gently every 5 minutes to make sure nothing sticks to the bottom of the pot.
  11. After twenty minutes stir well and serve.
  12. Enjoy!
