Easy Fried Rice


Make Chinese restaurant-style fried rice at home! It whips up in minutes and chicken, shrimp or pork can easily be added to make it a filling meal!

Give your regular fried rice a protein boost by swapping it with quinoa. Chocked with veggies and chicken, makes it a wholesome, filling meal for you!
Stir in any vegetables you like -broccoli, green beans, peas are all good options.

1 tsp olive oil plus 2 tbsp, divided
2 eggs
3 scallions, thinly sliced
2 tsp grated fresh ginger
2 tsp minced garlic
2 cups boneless, skinless chicken breast, cut into ½-inch pieces
½ cup yellow & red bell pepper, diced
½ cup carrot, diced
1 cup mushroom
1.5 cups quinoa
2 tbsp soy sauce
1 tbsp chilli vinegar
Cook quinoa- In 3 cups of boiling water add 1.5 cup of quinoa and let it boil until water is soaked.
Cook chicken - Add 1 tsp of olive oil in a large skillet over medium heat. Once heated, add in the chicken and season with salt and pepper. Sauté it for 7-8 minutes until the pieces are cooked through. Keep aside.
Cook veggies- Add the remaining oil to the same skillet over medium heat. Sauté the scallions until translucent. Add in the ginger, garlic, carrots, and bell pepper. Cook until tender.
Add mushrooms and cook for another 5 min. Season well with salt and pepper. Sauté for 3-4 minutes. Stir in the quinoa and chicken.
Finishing touch- Pour in the soy sauce and chilli vinegar. Stir everything until combined. Season with more salt and pepper if required. Top with chopped green onion.
Add egg - you can either keep and half fry on top or stir in the scrambled eggs while combing all elements.
